It was a late Sunday afternoon, the end of a hustling day spent entertaining the kids and stocking the fridge. I was exhausted and bedtime seemed so far away…
I sat down at my desk to review my files and get a head start on the week, when I heard the blender running in the kitchen. Before I had a chance to turn around my husband surprised me with this frozen mojito. It was the perfect pause of the day. I was so grateful to have someone read between the unspoken lines, who just by seeing my face knew that I needed to unwind and lift the pressures of the day just for a while.
Make this for one or shared by two, or double the recipe and share it with a crowd
Frozen mojito:
3 limes juiced
3 tbsp. honey
12 fresh mint leaves
½ cup white rum
2 cups ice
Place all ingredients in the blender and process until cool & slushy. Garnish with fresh mint.
